Qormah
Qormah (aka Korma) is an Afghan Dish usually served with savoury baked Challow Rice. (And easily served through the Menulog app.) The base is caramelised fried onions (you can almost smell them) with tomatoes added, then various fruits and spices depending on the recipe. Finally, the main ingredient is added, which can be meat, especially Chicken, Beef, Veal & Lamb – but also Veggies to make a delicious and richly coloured stew. Over 100 recipes include Qormah e Gosht (means ‘meat’ qormah, hugely popular, served with Palaw aka Rice at social gatherings), Qormah e Lawand (onion-based, with yogurt, turmeric, cilantro aka coriander and chicken, lamb or beef) and Qormah e Sabzi (prepared with sautéed spinach, other seasonal greens and lamb). Another fave, Afghan Karahi Curry, is prepared in a single wok-like pot with all ingredients added at once, fried, then left to simmer exquisitely until the flavours have melded. Kabuli Palaw
Kabuli Palaw is the popular National Dish of Afghanistan, with steamed Basmati Rice infused with powerful flavours from succulent lamb, lentils, raisins, carrots, onions, almonds and whole spices. Palaw is featured in many rice dishes using a rich variety of meat, stock and herbs which give rise to many fabulous flavours, aromas and colours that the rice dishes are often named after. For example, Zamarod Palaw (aka Emerald Palaw) which introduces Spinach just before the baking process, and hence the green Emerald name (be sure to use our gem of a Menulog app when ordering).
